Ingredients

1.5 lbs boneless, skinless chicken thighs

1/3 cup soy sauce (or tamari for gluten-free)

3 tablespoons honey or brown sugar

2 tablespoons rice vinegar or mirin

1 tablespoon sesame oil (optional)

2 garlic cloves, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch + 2 tbsp water (for slurry)

Instructions

Marinate the Chicken:
In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Add chicken and let marinate in the fridge for 30 minutes or overnight. -
Cook the Chicken:
Heat a skillet over medium heat. Add the marinated chicken (discard excess marinade) and cook for 6–8 minutes per side until browned and cooked through. -
Make the Sauce:
In the same skillet, pour the reserved marinade. Simmer for 3–5 minutes. Stir in cornstarch slurry and cook until thickened into a glaze. -
Coat the Chicken:
Return the chicken to the skillet and coat with the sauce. Let it simmer for 2–3 minutes until fully glazed. -
Serve:
Slice and serve over rice, noodles, or veggies. Garnish with sesame seeds and green onions.
