1 lb (450 g) ground beef

8 tortillas (flour or corn)

2 cups red enchilada sauce

2 cups shredded cheese

1 small onion, diced

2 cloves garlic, minced

2 tbsp olive oil

1 tsp chili powder

1 tsp cumin

½ tsp paprika
Instructions

Preheat oven to 375°F (190°C).

Sauté onion and garlic in olive oil.

Add ground beef, cook until browned; season with spices.

Stir in ½ cup enchilada sauce and ½ cup cheese.

Fill tortillas with beef mixture, roll, and place seam-side down.

Cover with sauce and sprinkle cheese.

Bake 20–25 minutes until bubbly.
