Cheesy, savory, and bursting with Tex-Mex flavor, these easy beef enchiladas are a weeknight favorite.


Ingredients

  • 1 lb (450 g) ground beef

  • 8 tortillas (flour or corn)

  • 2 cups red enchilada sauce

  • 2 cups shredded cheese

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp cumin

  • ½ tsp paprika


Instructions

  • Preheat oven to 375°F (190°C).

  • Sauté onion and garlic in olive oil.

  • Add ground beef, cook until browned; season with spices.

  • Stir in ½ cup enchilada sauce and ½ cup cheese.

  • Fill tortillas with beef mixture, roll, and place seam-side down.

  • Cover with sauce and sprinkle cheese.

  • Bake 20–25 minutes until bubbly.

  • Serve hot with toppings.
