A classic, comforting chicken soup with tender chicken, veggies, and your choice of noodles or rice.
Ingredients

1 lb (450 g) chicken breast or thighs

1 tbsp olive oil

1 onion, diced

2 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

8 cups (2 L) chicken broth

1 cup egg noodles (or rice/potatoes)

1 tsp fresh thyme (or ½ tsp dried)

2 tbsp parsley, chopped

Salt & pepper to taste
Instructions

Heat oil in pot, sauté onion, carrots, and celery.

Add garlic, cook briefly.

Stir in chicken, season.

Pour in broth and thyme, simmer 15 minutes.

Remove chicken, shred, return to pot.

Add noodles, cook until tender.

Stir in parsley, adjust seasoning, serve hot.
